I love having food that I can just go and grab out of my garden. The only thing is when I have too much of something, I am always scrambling to use it up before it goes bad. I had a zucchini that got quite large before I picked it and I was trying to think of something “new” that I could do with it. I remembered seeing zucchini pizzas somewhere, and they sounded perfect!!
They were super easy to make and were done in about 15 minutes!
To prepare I just cut the zucchini into rounds about 1/4 inch thick, and place on a baking sheet. Put 1/2 Tbs of spaghetti sauce in the middle of each(don't spread it out), then just put mozzarella cheese and a pepperoni on top. My son helped me do all of this, he loves cheese, so he was pretty much just grabbing a handful and putting half on the slices and would shove the rest in his Mouth, lol!I They baked in the oven at 375 for 13 minutes then broiled for two!
