5 minute Whole Wheat Pizza

I love me some pizza, but there are just some take out pizza crusts that I can't stand, they are greasy and spongy and I just can't!  My mother in law has a recipe that I followed for a while, but I just got tired of the texture, it wasn't fluffly at all...maybe I was doing something wrong.

Either way, I found this AMAZING recipe and tweaked it just a bit to fit my needs and it has been amazing.  We have been doing a family pizza and movie night for the last 4 months and this recipe has gotten used almost every Friday!!  It's easy to throw the crust together and super duper fast to bake which is great for starving kids.  

The picutres below are from a BBQ chicken one a few weks ago.  We used leftover BBQ chicken, mozzarella and jack cheese and red onions...with bbq sauce instead of regular pizza sauce.  It was fantastic!

Ingredients
1 3/4 cups warm water
3 3/4 cups whole wheat flour
1/2 tablespoon active dry yeast
1/2 tablespoon pink salt
1 Tbs olive oil
1 Tbs organic raw honey
Your choice of pizza toppings (We have tried everything from plain cheese and pepperoni to bbq chicken and cilanto, play around with it)
Instructions
In the bowl of your stand mixer combine the warm water, honey and yeast, let sit for 5 minutes then add in the salt and flour until just combined.
Loosely cover with a wet towel (you don't want it airtight) and set aside to rise for 2-3 hours.
Once the dough has risen, you can use it immediately or refrigerate it.  I have made this as long as a day before hand and as short as one hour, the longer it sits in the fridge the better the flavor.


To Make the Pizza:
Prepare your sauce, cheese, and other toppings ahead of time.  It's fun to have everything you want laid out and have your kids help assemble.
Using the highest possible temp your oven will allow (this will usually be 550-600 degrees Fahrenheit), preheat your oven and pizza stone for at least 30-45 minutes before you start cooking pizzas. This is super important as it cooks the pizza from both sides.
You can either make one large pizza, just make sure it will fit on your pizza stone before you assemble.  Take the ball of dough, or two(one at a time), and roll out on top of a piece of parchment paper.  I used to roll out dough on top of flour, but it always dries it out, so after watching a "pizza master" on tv roll out dough with olive oil I followed suit, and it works wonderfully!
Roll it out to your desired size and thickness(remember it will rise)  and make sure to keep a bit of an edge for a nice outer crust.  Make the entire thing on top of the parchment paper and when fully topped slide your peel underneath then slide onto the very hot pizza stone in the oven.
Bake the pizza for 5 minutes at 550+ degrees, then switch to the broil setting and broil for 1-2 minutes. It's done when the crust is golden brown and the cheese is completely melted.  I was completely skeptical that 5 mintues would be sufficient, but it totally works!!
Remove from the oven and repeat with your remaining dough if necessary.
